Careers Through Culinary Arts Program (C-CAP) is hosting is hosting a professional development conference for culinary instructors, to precede the American Culinary Federation’s national conference in Phoenix, Arizona!

Theme: Indigenous Foodways

Join us at the beautiful Talking Stick Resort for a lively, interactive conference with teachers from around the country. The theme of the conference is Indigenous Foodways. The conference will have workshops, hands-on instruction, and renowned guest speakers, exploring some of the most relevant culinary topics of today, including Native foods, artisan baking and the latest culinary trends. Space will  be limited, so sign up today! (See the program, below.)

Conference Cost:

Registration Deadline: Monday, June 10, Noon ET

$800 per person. This includes a single occupancy hotel room at the Talking Stick Resort; all meals; the conference program; taxes; service charge; resort fee, parking and wifi. The conference ends Friday afternoon, however if guests need to stay through Saturday morning due to travel plans, please contact abarko@ccapinc.org to confirm.

For those who wish to arrange their own lodging and only attend the conference and meals, the cost is $500 per person.

If your school requires a PO/Work Order to cover your attendance, reach out to Pam Marino, pmarino@ccapinc.org. Please specify if you plan on attending and need lodging or will secure your own accommodations.

Wednesday, July 10, 2024
During the Day: Attendees arrive and check in to Talking Stick Resort
5:30 PM: Bus from Talking Stick to Casino Arizona
6:00 to 8:00 PM: Opening Reception hosted by Casino Arizona and Chef Andrew Helmandollar. The dinner program will include an introduction to indigenous ingredients by Casino Arizona chefs.

Thursday, July 11, 2024
7:30 AM: Breakfast begins at The Roadrunner ABC, at Talking Stick Resort.
8:00 - 9:00 AM: 2024 Hospitality Trends with Denver University's Fritz Knoebel School of Hospitality Management, during breakfast at The Roadrunner ABC.
9:30 AM: Bus from Talking Stick Resort to Hayden Flour Mill
9:50 - 11:45 AM.: “From Field to Flour: How Local Flour Gets Made” at Hayden Flour Mill. Attendees will visit the flour mill, learn about different types of heritage flours, take part in a pasta and bread-making demonstration and enjoy a tasting.
11:50 AM: Bus back to Talking Stick Resort
12:30 - 1:30 PM: Lunch at The Blue Coyote Cantina, Talking Stick Resort
2:30 - 4:00 PM: Indigenous Ingredients and Foodways with James Beard-Nominated and Navajo chef Justin Pioche
5:30 PM: Bus from Talking Stick Resort to CALA Scottsdale
6:00 PM: Dinner at CALA Scottdale, hosted by CALA owner, Celebrity Chef Peter McQuaid (C-CAP Alumnus)
*Note, alcoholic beverages are not included but a cash bar is available.

9:30 - 11:00 AM: 2024’s Food Trends to Teach: A Demo by Chef Angel Joy (US Foods) at The Roadrunner ABC, Talking Stick Resort.
11:30 - 12:30 PM: C-CAP College Scholarship Cooking Competition Recipe Demo, by C-CAP's Eliana Lopera and Kevin Barko, at The Roadrunner ABC, Talking Stick Resort.
12:30-1:00 PM: C-CAP Teachers’ Conference Closing Remarks
1:00-2:00 PM: Final Lunch at Blue Coyote Cantina
